Method
- Take out the baby back pork ribs from all packaging and let breathe patting dry any excess moisture
- Next we can either season with sea salt and pepper or apply a rub of your choice, there's many great versions out there including the great British butchers range
- Pre heat the oven to 120 oc fan assisted or 130oc without
- Roast the ribs meat side down on a flat heavy based roasting tray, covered with tin foil for 3 and a half to 4 hours
- Take out oven and carefully turn over
- Gently brush a layer of bbq sauce over the ribs
- Return back to oven and roast for another 20 minutes until sugar caramelizes and the ribs become a rich in color and have a nice shine to the sauce
