Method

  1. Take out the baby back pork ribs from all packaging and let breathe patting dry any excess moisture
  2. Next we can either season with sea salt and pepper or apply a rub of your choice, there's many great versions out there including the great British butchers range
  3. Pre heat the oven to 120 oc fan assisted or 130oc without
  4. Roast the ribs meat side down on a flat heavy based roasting tray, covered with tin foil for 3 and a half to 4 hours
  5. Take out oven and carefully turn over
  6. Gently brush a layer of bbq sauce over the ribs
  7. Return back to oven and roast for another 20 minutes until sugar caramelizes and the ribs become a rich in color and have a nice shine to the sauce
