Method

  1. By hand, place egg yolks, vinegar, mustard in bowl and whisk till smooth and pale
  2. Slowly add oil drop by drop till all emulsified
  3. If it looks like cracking out add drops of water and whisk
  4. When oil is incorporated season to taste with lemon,salt and pepper
  5. In a blender follow the same method
