Ingredients
- 2 x Large egg yolks
- 1 tbsp Dijon mustard
- 2 tbsp White wine vinegar
- Juice of 1 lemon
- Salt and ground white pepper
- 2tbsp Warm water
- 250ml Pomace olive oil or best graded vegetable oil
Introduction
This is certainly a kitchen staple.Method
- By hand, place egg yolks, vinegar, mustard in bowl and whisk till smooth and pale
- Slowly add oil drop by drop till all emulsified
- If it looks like cracking out add drops of water and whisk
- When oil is incorporated season to taste with lemon,salt and pepper
- In a blender follow the same method
