Description

A fragrant twist on a British favourite, our Barnsley Chop with Rosemary & Lemon elevates this hearty cut with aromatic herbs and a bright citrus finish. Taken from right across the loin for a generous, two-sided chop, this cut delivers the same wholesome succulence and rich flavour as our classic Barnsley Chop - now infused with the natural pairing of rosemary and zesty lemon.

Ideal for pan-frying or griddling, this seasoned chop brings out the best of our free-ranging lamb, reared on lush pastures dotted with wild flowers, herbs, and natural grasses. A bold, flavourful choice for those who enjoy a little extra character with their chop.

How to cook Barnsley Chop With Rosemary & Lemon

Pair this hearty, flavourful chop with buttery mashed potatoes or roasted new potatoes to complement the rich lamb. Seasonal greens like tenderstem broccoli, green beans, or sautéed spinach work well, adding freshness to the plate. For an extra touch, a spoonful of minted pea purée or a light gravy infused with rosemary ties everything together perfectly.

About the cut

Barnsley Chop

Taken from the loin the Barnsley Chop is instantly recognisable for its curvy symmetry, and is a staple of British butchery boards. The loin is considered the most valuable part of the lamb, with the meat here very flavoursome and tender. Matured to concentrate the flavour, these steaks are sourced from small farms in the Dales and Fells to promise only the best quality.

Tasting notes:
Region:
Smallholding Farms In & Around Yorkshire

It's good to eat and enjoy heritage breed meat, showing farmers that there is a market for their herds and flocks and encourage them to rear them. Without a demand for their meat, many breeds would die out altogether. When intensive farming reigned unchallenged in the second half of the last century, many of our traditional breeds all but disappeared because they don't take kindly to factory farming. We want to change this and help more people realise that we need to safeguard the natural diversity of our farm animals and to demand meat with intrinsic flavour that comes from higher welfare systems. All of our meat fits that bill perfectly.
