Ingredients
- Shredded turkey (brown & white meat) mixed with a little leftover gravy
- 1kg New potatoes cooked & cut in halves
- 1 tbls. Chicken schmaltz
- 1 x Large onion finely sliced
- 2 x Granny smith apples, peeled cored & cut into wedges
- 2 Garlic cloves crushed
- 2 tbls. Madras curry paste
- Bay leaf
- Coriander cress or chopped
- Sea salt
- 1 lime
Method
This is a great way to use up any leftover Christmas turkey from your Christmas dinner, with both fragrant and spicy notes to elevate this dish.
- Preheat oven to 200°C fan assisted or 220°C without a fan (gas 7).
- Place potatoes, onions, garlic, schmaltz and madras paste in a roasting tray, mix well then season with salt.
- Roast for 20 minutes or until the onions are tender and potatoes golden brown.
- At this stage add the shredded turkey mixed with a little gravy then pop back in the oven for 5 minutes until thoroughly hot.
- To finish, add a good squeeze of lime juice and lots of fresh coriander.
TO SERVE:
- Serve with a winter salad and extra lime wedges.
