Ingredients
- pork rib eyes
- 2 x 285g Pork Rib Eye Steaks On The Bone
- 1 tsp. duck fat or light olive oil
- parsley & lemon crumb
- 1 x bunch of flat parsley, leaves only
- 1 x lemon (unwaxed)
- 1 x plump garlic clove peeled & crushed
- Fine quality sea salt flakes
- Ground black pepper
Method
Parsley & lemon crumb method
- Finely zest the lemon.
- Blitz the garlic and parsley together.
- Add the lemon zest.
- Season with sea salt flakes and freshly ground black pepper.
Charred pork rib eye method
- Remember, after removing your steaks from the packaging, pat dry and bring to room temperature.
- Preheat your griddle or heavy based frying pan until it sizzles when you add a drop of oil.
- Massage a little duck fat into the steak, then season with salt and pepper.
- Cook over high heat turning the steak only once, until rich in colour, then reduce heat to medium.
- Cook for 4 to 5 minutes on each side until firm to touch .
- Finish by adding a small knob of butter and baste the meat with the foaming butter for a minute or two.
- Leave to rest in a warm place for 4 to 5 minutes before serving.
