Ingredients
- 1 free-range chicken carcass
- 4 chicken wings (chopped at each joint)
- 1 large white onion (cut into wedges)
- 2 carrots (peeled & cut into lozenges)
- 2 branches celery (cut into lozenges)
- ½ leek (cut in 1cm rounds)
- 2 cloves garlic (finely sliced)
- 1 Fresh Bay leaf
- Small bunch dill (fronds only lightly chopped)
- 2 tbsp. Chicken Schmaltz
- 200g angel-hair pasta
- Sea salt & freshly ground white pepper to taste

Chicken noodle soup is a warming meal that is perfect for a cold winter’s night. Full of flavour, our recipe can be eaten straight away or batch cooked to enjoy again during the week. Discover how to make this easy chicken noodle soup with schmaltz which the whole family can enjoy together.Method
- Cover the carcass and wings with cold water and gently bring to the boil.
- Skim off any white impurities that come to surface then reduce heat and simmer for 1 hour.
- Add bay leaf and vegetables then simmer for another 1 hour.
- Next carefully remove the carcass, wings and bay leaf from the broth.
- When cool enough to handle, pick any chicken from the bones and reserve ready to add back to the soup.
- Bring the chicken broth to a rolling boil and add the pasta. Cook for 2 to 3 minutes or until just cooked, then add the picked chicken, stir in the schmaltz and the chopped dill.
- Taste the chicken noodle soup for seasoning adding plenty of white pepper and serve straight away.
