Coming with the bone in, our Oxtail is delicious when slow cooked in the pot, complete with rich flavours and tender beef falling off the bone. Oxtail is also well known for its use in soups, with the gelatinous meat being ideal as a base for soup making. Sourced exclusively from heritage breed grass fed herds, this traditional cut reflects the quality of our beef and makes for wholesome dishes.
A tradition for hundreds of years in British butchery, Oxtail had until recently been ‘forgotten,' but is once again coming back into fashion. As you'd expect, the Oxtail is cut from the tail bone, before being further cut into short sections on the butcher's block to give small, neat portions of beef suited to slow cooking. As such it's an affordable cut with all the rich qualities our beef offers.
A favourite of chefs for its rich flavoursome qualities, Oxtail is well suited to being used in casseroles in the Winter months and for tasty soups in the Summer. If slow cooking try cooking alongside a mirepoix of chopped onion, carrot, and celeriac, and stewing in red wine or a favourite ale. Serve with creamy mashed potato, seasonal vegetables, and hot English mustard.
