An Easter & Mother's Day exclusive, our cinnamon and raisin chicken crown pairs everything that's delicious about hot cross buns with our succulent, free-range chicken. Our Michelin-starred chef developed a hot cross bun stuffing, made up of free-range pork sausage meat, a sweetened breadcrumb, golden raisins, fine citrus peel and a mixed spice, to complement the natural flavour of our chicken. Using two breasts, the crown is stuffed before being hand tied by our Master butcher, locking in the flavours of the stuffing that will infuse the meat upon cooking. Sourced from our small network of trusted farmers, expect chicken with proper flavour, making for an exquisite centrepiece this spring.

About the cut
This crown gives the home cook complete control over the finished article. The legs are removed from the bird, and the butterflied chicken breast is left intact - 'the crown.' The result is wholesome, succulent and delicious chicken that tastes like chicken should.

For our free range chicken we use high welfare systems coupled with traditional farming techniques so that our birds plump up gradually.
