7 Day Dry-Aged Norwegian Belly
Farm: Farmison & Co Trusted Farm
Shelf Life: 5 Days
The Norwegian Pork Belly is a specialty piece, with the creamy meat and ribs making for a rich, succulent centrepiece, on the bone for maximum flavour. Well suited to slow roasting, the impressive character of the pork belly reflects the rich diets of our outdoor reared hogs which are allowed to mature at their own pace for the best results in the kitchen.
Inspired by Norwegian traditions of pork butchery, the belly is ordinarily rolled and boned, however this joint is a favourite for special occasions as a roasting joint on the bone and offering the fat cover that gives the meat its flavour and natural juiciness. Matured for 14 days, the belly demonstrates why our native breed pork is so special.
The quality of our native breed pork belly makes for a delicious joint perfect for a slow roasting, with the ribs providing neat portions of roasted pork. Try roasting on a trivet of onion, carrot, and celeriac to give the belly standout aroma, and serving with savoury pork meatballs, boiled potatoes, and Brussels sprouts.
