Ingredients
- 500g Diced lamb (cut into bite size pieces)
- A dash of vegetable oil
- 8 x Cardamom pods, seeds only
- 5 x Whole cloves
- 8 x Whole peppercorns
- ½ cinnamon stick
- 1 Onion, chopped
- 1 x Red chilli, chopped
- 2-3cm Piece of ginger peeled and chopped
- 7 x Garlic cloves peeled
- 1 tablespoon water
- 1 teaspoon ground cumin
- 4 teaspoons paprika
- 1 teaspoon chilli powder
- 4 x Medium tomatoes chopped, (whole tinned plum tomatoes will do if you do not have fresh)
- 300ml Lamb stock
- 100g Natural yoghurt
- Few stems of fresh coriander chopped (optional)
- Seasoning
Introduction
This is a great Friday night supper dish where everyone can dig in. Lovely served with pilaf rice and naan bread.Method
Directions:
- Pre-heat oven to 150C, 300F, gas mark 2
- Warm a heavy based ovenable pan over a high heat and add oil
- When oil is hot, brown the diced lamb evenly
- Remove the meat and set to one side
- Turn the heat down and add the cardamom seeds, cloves, peppercorns and cinnamon
- When the spices begin to pop add the onions and red chilli
- Cook until the onions begin to soften
- Add a little more oil if you think it is needed
- Using a pestle and mortar puree the ginger and garlic with the water
- Add them to the softened onion and chilli and cook for 1 minute
- Stir in the cumin, paprika, chilli powder and tomatoes
- Cook until tomatoes begin to soften
- Place the diced lamb back into the pan, add the stock and stir well
- Cover and cook in the oven for approx. 1 ½ - 2 hours, stirring occasionally until the meat is tender and the sauce thickened
- Add seasoning if required
- Remove the diced lamb carefully with a slotted spoon and set aside. Also remove the cinnamon stick
- Add the yoghurt to the remaining sauce and mix well
- Pass through a sieve and return the meat to the sieved sauce
- Garnish with fresh coriander of required.
