Ingredients 
    
    - 500g beef mince
 - 1 garlic clove, crushed
 - ½ tsp ground coriander
 - 1 tsp ground cumin
 - 4 figs, thickly sliced
 - 200g halloumi, thickly sliced
 - ½ lemon, juiced
 - 3 tbsp extra virgin olive oil
 - 1 bunch salad leaves
 
Method
- Soak 8 small wooden skewers in cold water.
 - Place the mince into a bowl along with the garlic, coriander and cumin, salt and black pepper.
 - Mix well and divide into 8.
 - Press the beef around the skewer forming a sausage, ¾ the length of the skewer.
 - Repeat with the remaining meat and skewers then place in the fridge to set.
 - Heat a griddle pan until hot, add the skewers and cook for 2-3 minutes on each side.
 - Heat a separate frying pan until hot, add the fig slices and fry on each side for 30 seconds.
 - Remove then add the halloumi and cook on each side for 1 minute.
 - Whisk the lemon juice, olive oil, salt and black pepper together then use a little to dress the leaves.
 
To serve
- Place alternate slices of fig and halloumi onto the centre of the plate.
 - Place a pile of the leaves on top then finish with 2 kebabs.
 - Drizzle over a little of the remaining dressing.
