Ingredients

  • 250 g finely diced pancetta or dry cured streaky bacon
  • 1 xxl white onion finely diced
  • 125 g finely diced prunes
  • 150 g soft brown sugar
  • 75 ml sherry vinegar
  • 75 ml fresh brewed black coffee

Introduction

Bacon like never before, perfectly made to pair as a relish with your sandwiches, hotdogs and burgers. With a unique blend of tarty prunes and balanced acidity of vinegar, the jam subtly compliments the savoury dishes with its sweetness.

Method

  1. Sauté pancetta or dry cured streaky bacon until golden brown then keep to one side
  2. Sweat the onion in pancetta fat until soft
  3. Add prune, sugar and vinegar and reduce to syrup
  4. Add the pancetta, coffee and chilli flakes
  5. Cook out slowly until rich, jam like texture
  6. Pair it with your sandwiches, sausages and burgers
  7. Preserve in sterile jars for up to 1 month
