  • 4 x pork skewers
  • 2 tbls. Hoisin sauce
  • 2 tbls. Fermented black bean sauce
  • 1 tbls. Hot chili sauce
  • 1 tbls. Toasted sesame seeds
  • 1 x lime
  • Pak Choy blanched until tender in salted boiling water & refreshed in cold water
  • Kale blanched until tender in salted boiling water & refreshed in cold water
  • Tender stem broccoli blanched until tender in salted boiling water & refreshed in cold water

  1. To make marinade; simply whisk together the hoisin, black bean, sesame seeds and chilli sauce into a paste.
  2. Remove skewers from packaging, pat away any juices and season with sea salt.
  3. Preheat a griddle or heavy-based frying pan, rub the pan with a little oil then sear the pork on all sides until just cooked for 8-10 minutes, then finish by brushing with the glaze and cook until rich & sticky.
