  • Difficulty easy
  • Serves 6-8
slow roast pork ribs

Ingredients

  • 1kg Rare breed ribs of Saddleback pork
  • 4 tbsp Light brown sugar
  • 2 tbsp Hoisin sauce
  • 1 tbsp Fish sauce
  • 2 tbsp Whiskey
  • 1 x Shallot finely sliced
  • 1/4 Cup coriander leaves, finely chopped
  • 1/2 tsp ginger powder
  • 1/4 Cup fish sauce
  • Juice of one lime
  • 1 tbsp Brown sugar
  • 1 tbsp Toasted ground rice
  • 1 tbsp Dried chilli flakes
  1. Marinade the ribs, uncut, in the sugar, hoisin, fish sauce and whiskey. Refrigerate for up to four hours.
  2. Slow roast in an oven at 150°C for 90 minutes. Grill for the last 5 minutes or so, until the ribs go sticky and caramelised.
  3. To create the sauce, mix all the remaining ingredients and let steep for about 30 minutes. Don't skip on the toasted ground rice; prepare this in advance by toasting raw sticky rice in a saucepan until dark brown, taking care not to burn it. Leave the rice grains to cool, then grind in a coffee grinder until a fine powder.
  4. Serve the ribs with the spicy dipping sauce on the side.
