Introduction
Method
- Pre-heat and oven to 190C (gas 5).
- Mix the sweet potato with olive oil, orange zest and juice, garlic, thyme and season with salt and pepper
- Roast in the oven for 30 mins or until the potaoes are cooked.
- Season the rack of lamb with salt and pepper, then cook in an oven ready frying pan on a gentle heat until the fat starts to render down
- Then pop in the oven with potatoes for 15 mins to be medium rare.
- Rest for 10 mins before carving and serving with the roasted sweet potatoes.
