Ingredients

  • 4 x Quails, back bone remove and flattened to a spatchcock
  • Juice and zest of 2 oranges
  • 2 x Cloves peeled and finely chopped garlic
  • 2tbls of good olive oil
  • 1tsp of crushed coriander seeds
  • Small bunch of flat parsley roughly chopped
  • Salt and pepper to taste

Introduction

A great alternative to chicken or pheasant.

Method

  1. Mix orange juice and zest with garlic, olive oil, coriander, parsley and seasoning
  2. Use half this dressing to marinade the quails
  3. Marinade for a minimum of 20 minutes
  4. Heat the BBQ , grill or griddle pan
  5. Cook the quails 4 minutes on both sides
  6. Rest for 5 minutes and serve with the excess dressing and salad of your choice.
