How to cook beef oxtail

A favourite of chefs for its rich flavoursome qualities, Oxtail is well suited to being used in casseroles in the Winter months and for tasty soups in the Summer. If slow cooking try cooking alongside a mirepoix of chopped onion, carrot, and celeriac, and stewing in red wine or a favourite ale. Serve with creamy mashed potato, seasonal vegetables, and hot English mustard.

About the cut

Oxtail

A tradition for hundreds of years in British butchery, Oxtail had until recently been 'forgotten,' but is once again coming back into fashion. As you'd expect, the Oxtail is cut from the tail bone, before being further cut into short sections on the butcher's block to give small, neat portions of beef suited to slow cooking. As such it's an affordable cut with all the rich qualities our beef offers.

Tasting notes:
Region:
Smallholding Farms In & Around Yorkshire

It's good to eat and enjoy heritage breed meat from British breeds, showing farmers that there is a market for their herds and flocks and encourage them to rear them. Without a demand for their meat, many breeds would die out altogether. When intensive farming reigned unchallenged in the second half of the last century, many of our traditional breeds all but disappeared because they don't take kindly to factory farming. We want to change this and help more people realise that we need to safeguard the natural biodiversity of our farm animals and to demand meat with intrinsic flavour that comes from higher welfare systems. All of our meat fits that bill perfectly.
