Ingredients

  • 1 x 7 bone rack of lamb
  • 400g peeled and wedged sweet potatoes
  • 8 x sprigs thyme
  • 4 x cloves of broken garlic
  • 2tbl spoons olive oil
  • Juice and zest of 1 orange
  • Salt and pepper to taste

Introduction

The ideal Sunday afternoon roast dinner for the family.

Method

  1. Pre-heat and oven to 190C (gas 5).
  2. Mix the sweet potato with olive oil, orange zest and juice, garlic, thyme and season with salt and pepper
  3. Roast in the oven for 30 mins or until the potaoes are cooked.
  4. Season the rack of lamb with salt and pepper, then cook in an oven ready frying pan on a gentle heat until the fat starts to render down
  5. Then pop in the oven with potatoes for 15 mins to be medium rare.
  6. Rest for 10 mins before carving and serving with the roasted sweet potatoes.
