Aromatic herbs and citrus peel are added to a gentle brine before a tied and boneless breast is submerged for several hours to produce a deliciously seasoned and succulent free-range carving joint of nothing but white breast meat. Brining as a method helps ensure the turkey doesn't dry out when cooking, and with the infusion of herbs and citrus, adds fragrance and succulent flavour. This is an artisanal piece, reflecting contemporary trends as butchers and chefs give modern twists to traditional classics Still tasty when enjoyed the next day, it loses none of its succulence thanks to the traditional brining process. How to cook Winter Spice Brined Turkey Breast

The free-range turkey breast is perfect if you have a smaller table of guests, or who prefer white breast meat to brown leg meat. Due to its smaller size, this crown lends itself to quicker cooking times as well as smaller ovens, making it a popular choice for Christmas Dinner. Simply brush melted butter or chicken schmaltz over the free-range turkey before roasting, and baste throughout. Give your turkey breast plenty of time to rest before carving. For a truly special spread, pair with traditional trimmings and condiments.

Turkey Breast

Our turkey flocks mature in the great outdoors at their own pace to ensure the flavoursome and succulent meat essential for a celebration roast. The turkey breast is carefully cut away from the whole bird, leaving the entirety of the boneless breast meat intact for roasting. This is an increasingly popular option at Christmas time for slightly smaller tables or for those who prefer the breast meat.
