Our seasonal venison haunch is ideal for traditional roasting making a Christmas dinner to remember. The haunch is filled with black truffle butter and is wrapped in Crépinette that locks in the moisture of the joint whilst roasting. The truffle has a mild but distinct flavour which complements the rich taste of the wild venison for the perfect balance. This joint is a luxurious combination that is sure to be a showstopping Christmas dinner.

All of our Christmas range delivered on 19th Dec to 23rd Dec is guaranteed to stay fresh until Boxing Day *except products containing pastry which are pre frozen. 48 hour deliveries (Highlands & Islands) may have a shorter life depending on dispatch times.

How to cook

This is a roasting joint deserving of the top table this Christmas, and a culinary speciality not to be missed. Venison Haunch

Wild venison is typically lean with lots of connective tissue, and the haunch is cut from the top of the back legs. This requires skill to cut neatly away from the bone, before trimming the meat and neatly rolling for a spectacular, easy-carve roasting joint.

It's good to enjoy venison, with its supremely healthy meat and lean quality, and we source ours from areas where deer management is crucial. Experts estimate there have never been so many deer in the UK, and with an absence of natural predators their sheer numbers threaten to overwhelm natural ecosystems. We source our wild venison from the Cairngorms in Scotland and the Fountains Abbey Estate, which is just up the road from us in Ripon, North Yorkshire. The Cairngorms is one of the wildest and romantic areas of the British Isles, while the Fountains Abbey Estate supplies us with wild parkland venison as their rangers need to control the numbers carefully. We typically stock Red deer, but occasionally receive Sika and Fallow deer.
