Our seasonal venison haunch is ideal for traditional roasting making a Christmas dinner to remember. The haunch is filled with the finest decadent black truffle and sea salt butter, wrapped in caul fat that locks in the moisture of the joint whilst roasting. The truffle we use has a mild but distinct earthy flavour which compliments the rich taste of the wild venison for the perfect balance. Most truffle pastes consist of a chemical 'arome' to mimic the aroma and taste of truffles. Ours on the other hand is totally pure, using nothing but black winter and summer truffle peelings, a truffle broth and olive oil, providing a clean, natural but genuine flavour. This joint is a luxurious combination that is sure to be a showstopping Christmas dinner.

All of our Christmas range delivered on 19th Dec to 24th Dec is guaranteed to stay fresh until Boxing Day *except products containing pastry which are pre frozen. 48 hour deliveries (Highlands & Islands) may have a shorter life depending on dispatch times.

How to cook the Wild Venison Haunch

This is a roasting joint deserving of the top table this Christmas, and a culinary specialty not to be missed. Roast the joint allowing the truffle butter to infuse the venison with earthy rich flavour in the oven. Be sure to glaze the roasting tray with fresh stock for a sublime fragrant gravy infused with the truffle butter. About the cut

Venison Haunch

Wild venison is typically lean with lots of connective tissue, and the haunch is cut from the top of the back legs. This requires skill to cut neatly away from the bone, before trimming the meat and neatly rolling for a spectacular, easy-carve roasting joint.
