This gourmet English special is made by hand with wild venison, Yorkshire pork, and caramelised onion marmalade. The recipe has been crafted in-house to provide the perfect balance of flavours, and cannot be matched for its unique character. With its savoury finish but lean texture, this sausage is ideal for year round gourmet dining, inside or out, and is perfect for mid week meals, buffets, and barbecues.

Pork (54.6%), venison (36.4%), red onion chutney (4.5%), (red onion (58%); brown sugar; balsamic vinegar (9.6%); onion; sunflower oil; modified starch; concentrated lemon juice; gelling agent: pectin), seasoning: salt, potato starch, spices: (white pepper, coriander, nutmeg, black pepper, chilli powder, pimento, yeast extract, preservative: (sodium metabisulphite) (sulphites), onion powder, antioxidant: (ascorbic acid), sunflower oil). ciabatta breadcrumb: fortified wheat flour (wheat flour, calcium carbonate, iron, niacin, thiamin), water, extra virgin olive oil, rapeseed oil, salt, yeast), orange peel, crushed juniper berries, natural hog casings.

How to cook

Let your sausages come to room temperature before cooking. Preheat the pan with a fine film of oil, though not too hot as this could cause the sausages to explode. Don't overcrowd the cooking base, and cook through on a medium heat, until rich in colour, caramelised and firm to touch.
