About the cut
Also known as Onglet in French cuisine, this steak is also a staple of traditional Mexican and Texan steak cutting. The Hanger is similar in texture to the Flank Steak, but more prized and well known for its flavour, making it the first of the non-traditional prime cuts of the beast to be typically sold. That's because there's only two per beast, meaning very limited supply of this cut.
