Exclusive to Farmison & Co and a twist on the British classic, our festive wild venison and air-dried ham wellington will make for a generous meal for two people. Made with Madeira-infused mushroom duxelles wrapped in air-dried ham and the all-butter flaky puff pastry. Not forgetting the all-important tender larder trimmed loin sourced from the finest wild venison. This wellington is perfect for festive dinners, boasting rich and well-developed flavour. Be sure to consult our recipe tips for cooking times, serve alongside redcurrant jelly and our rich red wine sauce.

This product is frozen and will defrost whilst in transit to you. Ensure this product is thoroughly defrosted before cooking. We strongly recommend baking within 24 hours for best quality. This product must not be refrozen.

How to cook

This luxury venison wellington makes a generous, easy to bake meal for the the discerning table. Remove the wellington from the packaging 24 hours prior to baking, and place on a tray lined with parchment paper. Preheat your oven and place the wellington on the middle shelf and bake until the puff pastry is golden brown. Leave to rest before serving with parsnip mash, buttered savoy cabbage and a chestnut and px sherry sauce for the ultimate festive meal.
