Description

Exclusively sourced from the ancient Fountains Abbey Studley Royal estate, these wild venison medallions are cut from the striploin and make for tender, indulgent eats when simply flash fried and sliced. Sourced exclusively from wild deer, these steaks reflect the quality of our wild parkland venison and serves as an ideal introduction as to how good venison can be. Please note, as every wild deer is different, we measure by weight rather than number of medallions per pack.

Shelf life: minimum 5 days.

About the cut

Venison Medallion

The medallions are cut from the loin of the deer, otherwise known as the backstrap. This is the prime cut, yielding a rich finish, and is often to be found on specials boards for seasonal fine fining.

Similar to the fallow deer in their colouring, sika were introduced to Britain in 1860, and now have ranges across the five countries of the British Isles. Their success is especially marked because it is thought that the vast majority of these animals descend from one stag and three hinds introduced to Viscount Powerscourt's deer park at Enniskerry, Eire. Interbreeding with red deer is just one issue that the breed poses, as the deer population in the UK has exploded in recent years. Expect a finer grained finish with plenty of flavour.
