A British favourite and the most prized cut of grass-fed British lamb, these free-range lamb cutlets are cut from the rib to give a generous portion of the lamb loin on the bone. Generously marinated in Korean staple ssamjang sauce, giving these cutlets just the right amount of kick that's sure to fire up your barbecue. As such they're ideal for warm evening barbecues or dinner parties, with the cutlets lending themselves to roasting on a high heat for juicy succulence. The impressive flavour of the grass-fed lamb reflects the quality of the lush pastures where our grass-fed flocks mature to their natural potential. Serve with fresh seasonal salad and kimchi, or alongside ssamjang or gochujang sauces which make for the perfect dip.

About the cut

Lamb Cutlet

Taken from the same part of the animal as the rib rack, these cutlets are cut into individual portions with the bone left in for flavour and presentation. The loin is considered the most prized part of the lamb for the butcher, with the meat here very flavoursome and tender. Matured to concentrate the flavour, these cutlets are sourced from small traditional farms to promise only the best quality.
