Inpired by American traditions of butchery, our salt-cured silverside boasts the tighter, firm grain of meat that makes it a must for poaching and serving hot with pickled cabbage and your favourite mustards, or cooling for deep sandwiches with the salty taste matching particularly well with pickles. Made using grass fed beef, and then cured by our expert butchers, this is a year round favourite for exquisite flavour and texture.

How to cook

Simmer in lots of water with aromatic herbs and vegetables until tender. The saltiness of the beef matches well with gherkins, though this Jewish favourite can also be broken up, mixed with mashed potato, and fried into hash. About the cut

Salt Brined Silverside Joint

This is British contemporary butchery at its best, though made using American-style techniques increasingly being used by artisan butchers. The silverside itself is sourced from free ranging herds, before being cured with a traditional wet brine devised to yield the most intense flavours over the course of ten days.

It's good to eat and enjoy heritage breed meat from British breeds, showing farmers that there is a market for their herds and flocks and encourage them to rear them. Without a demand for their meat, many breeds would die out altogether. When intensive farming reigned unchallenged in the second half of the last century, many of our traditional breeds all but disappeared because they don't take kindly to factory farming. We want to change this and help more people realise that we need to safeguard the natural biodiversity of our farm animals and to demand meat with intrinsic flavour that comes from higher welfare systems. All of our meat fits that bill perfectly.
