Our free-range succulent gammon is a creamy and flavoursome traditional joint, cut from the leg and dry cured. Our cure is enriched with a hint light muscovado sugar, perfectly balancing the saltiness of the pork on the palate before being air dried to intensify the natural flavour of the pork. Slow roast this joint for tender, melt-in-the-mouth meat, or alternatively poach in an aromatic court bouillon for a juicy show-stopping joint.

Pork (96.6%), dry cure seasoning: (salt, sucrose, preservatives: (sodium nitrite, sodium nitrate), antioxidant: (ascorbic acid), light muscovado sugar).

How to cook

To get the best results from this Ripon Cathedral Sweet Cure Gammon Joint, simply cover with your chosen liquid, spices and aromatic vegetables, bring to the boil, and simmer gently for around 90 minutes or until tender.
