The Slate Grey free-range turkey is a first for Farmison & Co and makes for an exclusive rare-breed centrepiece. Popular in the early part of the 20th century, the free-range bird is now on the Rare Breed Survival Trust watchlist and considered critically rare worldwide. Only by eating the Slate Grey free-range turkey can we save them from extinction, which is why we urge to make this turkey your Christmas centrepiece this year. Our birds are sourced from free-ranging flocks that have plumped up naturally all autumn amongst an orchard of wild herbs and cherry trees, to make for an abundance of succulent, rich white and dark meat with excellent flavour. We've included the giblets perfect for a traditional gravy for your Christmas table.

All of our Christmas range delivered on 19th Dec to 24th Dec is guaranteed to stay fresh until Boxing Day *except products containing pastry which are pre frozen. 48 hour deliveries (Highlands & Islands) may have a shorter life depending on dispatch times.

How to cook Rare Breed Slate Whole Turkey

A well roasted turkey always goes down well with its winning combination of white and brown meat, complete with crispy skin. Roast and alow to rest before serving on Christmas day, and use the leftovers in sandiwches, risottos, and festive salads, and boil up the carcass with any vegetables or herbs to make s tock for your next roast or soup. About the cut

Whole Turkey

The whole turkey became a British favourite for Christmas dinner in the 1950s, as the nation embraced the ample quantities of flavoursome meat after the privations of rationing. Our whole turkeys are wax plucked to ensure optimum texture and are game hung. The traditional process of game hanging for 14 days tenderises the meat and concentrates the flavour of the turkey. The bird is then expertly prepared and hand-dressed and comes with the essential giblets allowing you to make a proper tasting gravy.

Named after its ashy blue colouring, the flavour of the Slate turkey is reputedly one of the best, but has been unrecognised for centuries, driving the breed to become critically rare across the world. We're proud to put this bird back on the Christmas menu, with it's succulent white and dark meat sure to impress. These birds have been given the freedom to roam and time to grow, plumping up naturally, foraging cherry orchards and grass meadows, making for a truly special free-range centrepiece
