Description

The succulent loin of Christmas pork is French trimmed and stuffed with winter fruit pâté. This infuses the centrepiece with fruity flavour to complement the savoury quality of the free range pork. The French trimming of the rib makes for an easy carve and eye-catching finish, with a rib per serving and the essential crackling. Cut from the loin, the rind is left on the meat and scored on the butcher's block to give outstanding crackling. Through the eye of the meat, a hole is carefully carved out, and the winter fruits are piped in ready for enhancing the meat upon cooking.
