Taken from the shanks, Osso Buco literally means 'bone with a hole' in Italian and is famous for the Milanese slow cooking dish of the same name. The cut is ideal for braising, with the bone rich in marrow providing flavour and the meat promising melting tenderness. Sourced exclusively from heritage breed beef herds reared at their own natural pace, on lush pastures to their full maturity.

How to cook beef osso buco

A cut increasingly appearing on restaurant menus as the delicious qualities of this cut become more recognised. Osso Buco the dish is typically made with veal shanks, but the beef alternative offers more robust flavours as well as outstanding tenderness. About the cut

Osso Bucco

Also known as the Bone In Shank, Beef Osso Bucco has entered British butchery traditions recently as an extremely popular slow cooking cut. The key is to deliver a large cross section of bone with a generous portion of marrow, and ample meat attached to this. The shanks are a traditional favourite of butcher's, often reserved in generations passed for the butcher's own pot at home.

Without a demand for their meat, many breeds would die out altogether. When intensive farming reigned unchallenged in the second half of the last century, many of our traditional breeds all but disappeared because they don't take kindly to factory farming. We want to change this and help more people realise that we need to safeguard the natural biodiversity of our farm animals and to demand meat with intrinsic flavour that comes from higher welfare systems. All of our meat fits that bill perfectly.
