Description

Our Old World pork demonstrates traditional English methods of rearing hogs. The pigs are left to mature for longer, on a healthy and natural diet to put on weight. This ensures the ample, creamy fat cover - much more so than our typical pork, and more akin to the famed Japanese Kurobuta, otherwise known as the 'wagyu' of the pork world.

The pork leg is a roasting special, ideal for pot roasting and boasting the rich, succulent flavour that makes our free range pork so special. The dry aging process concentrates the porky taste of the meat, which is by virtue of the strict use of native breed pork reared on a rich diet and being allowed to mature at their own pace.

How to cook

The quality of our native breed Pork Leg makes for a delicious, lean joint perfect for a slow roasting as well as being well suited to marinating. Try roasting on a trivet of onion, carrot, and celeriac to give the joint aroma, serving with traditional roast potatoes, Yorkshire puddings, and buttery apple sauce.

About the cut

Pork Leg Boned

A roasting joint well loved for its leaner finish than other pork joints, and carefully boned by our Master Butcher. Our pork joints are sourced from a supply of free range pork, to ensure deep colour and character that mass produced pork cannot match. This is added to upon dry aging for a minimum of 14 days, which concentrates the rich flavours and gives the meat its standout quality.

It's good to eat and enjoy heritage breed meat, showing farmers that there is a market for their herds and flocks and encourage them to rear them. Without a demand for their meat, many breeds would die out altogether. When intensive farming reigned unchallenged in the second half of the last century, many of our traditional breeds all but disappeared because they don't take kindly to factory farming. We want to change this and help more people realise that we need to safeguard the natural biodiversity of our farm animals and to demand meat with intrinsic flavour that comes from higher welfare systems. All of our meat fits that bill perfectly.
