Our Old World pork demonstrates traditional English methods of rearing hogs. The pigs are left to mature for longer, on a healthy and natural diet to put on weight. This ensures the ample, creamy fat cover - much more so than our typical pork, and more akin to the famed Japanese Kurobuta, otherwise known as the 'wagyu' of the pork world.
A prime pork roasting joint skilfully prepared by our Master Butcher and perfect for a big feast with all the trimmings. Coming with the rind on and already scored, this joint is ideal for ample crackling to go round the whole table, while our native breed pork promises outstanding succulence and flavour by virtue of a rich diet and being allowed to mature at their own pace.
A chef's favourite for roasting due to a consistent shape that promises an excellent finish each time, and due to being an easy carve centre piece with plenty of flavour, deserving of the top table. For a traditional favourite, roast on a trivet of onion, carrot, and celeriac and serve with Yorkshire puddings, roast potatoes and buttery apple sauce.

About the cut
A roasting joint well loved for its leaner finish than other pork joints, and carefully boned by our skilled butchers. Our pork joints are sourced from a supply of free range pork, to ensure deep colour and character that mass produced pork cannot match. This is added to upon dry aging for a minimum of 14 days, which concentrates the rich flavours and gives the meat its standout quality.

It's good to eat and enjoy meat from free range systems, showing farmers that there is a market for herds reared in an ethical manner. When intensive farming reigned unchallenged in the second half of the last century, many of our traditional breeds all but disappeared because they don't take kindly to factory farming. We want to change this by backing free range farming and helping more people realise that we need to safeguard the variety of our farms and to demand meat with intrinsic flavour that comes from higher welfare systems. All of our meat fits that bill perfectly.
