About the cut
Minced mutton is a great alternative to that of beef or lamb. Any mince is regarded as a staple of a butcher's trade, but nowadays the focus is often making the mutton go as far as possible. Our approach is different, and hasn't changed for generations. The animals used are in their prime, grass fed, and sourced from small farms that produce consistent mutton, while the cuts used promise ample marbling and fat content for proper flavour and colouring. Our mutton brings you rich herbal flavours from the wild herbs and plants the sheep forage on.

It's good to eat and enjoy mutton, showing farmers that there is a market for their flocks of mature sheep. For many years, mutton has been one of Britain's best kept culinary secrets but that's slowly changing as people embrace the quality of this meat. Our flocks forage and graze naturally, eating a mix of wild grasses, flowers, herbs, and heathers. This gives the mutton its rich, succulent taste which makes this meat such a delicacy. We want to revive the tradition of eating mutton and help more people realise that this supremely enjoyable meat should be enjoyed. Our heritage mutton is sourced from flocks of Suffolk, Swaledale, and North of England Mules.
