Unlike our British beef short ribs, the Korean cut is taken from the chuck end of the short ribs, cut horizontally across the rib for long, thin pieces of meat studded with the knuckle of the rib. Created by our in-house Executive Development Chef, these ribs are marinated in a Korean pantry staple, Gochuijang sauce, for a kick of umami flavour and spicy yet sweet notes. These are a versatile cut that have grown in popularity over the years, well suited to quick frying, as well as popping under the grill or on the BBQ for meaty ribs that are full of flavour. Left on the bone for maximum flavour, these ribs promise melting quality, showcasing the rich quality of the rib meat of our grass fed beef, sourced exclusively from heritage breed herds, reared in the great outdoors.

Short Ribs

Also known as Thin Ribs, or as sliced Jacob's Ladder, Beef Short Ribs are popular the year round. The rib is one of the prized parts of the beast, offering flavoursome rich cuts of beef, made extra special by the use of pedigree beef breeds. Our Short Ribs are cut in the Flanken style across the bone, giving a cross section of two or more bones, and offers more meat to be held in between the ribs.
