This Christmas beef fillet barrel is taken from the centre cut of the fillet, for a meltingly tender free-range beef roasting joint that's ideal for a celebration Christmas meal. We've studded this popular cut with luxurious bearnaise butter for the ultimate treat this festive season, allowing you to baste the meat while it roasts in a rich, succulent sauce. The fillet is the choice cut in the British Isles, and certainly in the most demand at Christmas when people celebrate in style. The studs of bearnaise butter flavour and moisturise the meat as it renders down, adding to the meat's natural tenderness. This is an impressive cut of free-range beef that dinner party guests are sure to love. Serve with roasted parsnips, luxurious mash and red wine sauce to finish.

How to cook the beef fillet barrel

To cook massage a little duck or goose fat onto the barrel, and season with good quality fine sea salt. On a heavy-based frying pan, sear the free-range beef on all sides before placing in the centre of the oven and finishing. Allow the meat to rest for at least half the cooking time before carving, this allows the grain to relax making for super tender beef. The underworked fillet muscle of the beast makes for the most tender beef, often reserved for prime steaks in restaurants. Our centre cuts are further tenderised by the essential aging process, which enhances the natural quality of the beef, concentrating the flavour.
