This is one of our best-selling items. The Peking style duck consists of a Yorkshire Wolds bird that is brined for three days in an authentic mix of classic Chinese flavours including black vinegar, five spice, Sichuan peppercorns, and light soy sauce. We've included plenty of British made Pancakes and the all important Hoisin Sauce. All that needs to be added is finely sliced fresh spring onions and batons of peeled and de-seeded cucumber. This is probably Britain's favourite Chinese meal brought expertly and authentically to you by F&Co.

The Oxygen Sachets within the pack must be disposed of before cooking.

Shelf life: minimum 6 days.

Duck ingredients: duck (bone in) (98%) (made with 135g duck for every 100g finished product), black rice vinegar: (water, glutinous rice, wheatbran, sugar, salt), spices: (salt, star anise, black pepper, clove, fennel seed, cassia, sichuan pepper), soy sauce: (fermented soya beans, salt, water), honey.

Pancake ingredients: wheat flour (with calcium, iron, niacin, thiamine), water, rapeseed oil, salt.

Hoisin sauce ingredients: sugar, water, fermented soybean paste (15%): (water, salt, soybeans, wheat flour), salt, corn starch, dried sweet potato, rice vinegar (water, rice, sugar, salt), dehydrated garlic, sesame paste, spices, salted chilli pepper.

How to cook whole peking crispy duck

We are seeing increased demand for our better meat prepared into family favourites and the Peking style duck is a prime example of this. Our free range ducks are left to hang and dry for 48 hours before a low, slow and gentle dry roast followed by a steam cook for three hours to ensure the fat is fully rendered while maintaining the moisture and flavour of the meat.
