A showstopping seasonal centrepiece, our venison saddle wrapped in crépinette makes for the ultimate easy-carve roasting joint. The rich flavour of the venison pairs perfectly with the prunes, apricots raisins, and cranberries that have been steeped in brandy to provide warming and induglent quality. Roast this dark, lean meat for a full-bodied and rich finish that will be the talk of the table.

All of our Christmas range delivered on 19th Dec to 23rd Dec is guaranteed to stay fresh until Boxing Day *except products containing pastry which are pre frozen. 48 hour deliveries (Highlands & Islands) may have a shorter life depending on dispatch times.

About the cut

Venison Saddle Rolled

The saddle is cut from the middle of the beast, from either side of the back bone. This yields some of the richest meat of the animal, and requires skill to cut neatly away from the bone, before trimming the meat, and neatly rolling for a spectacular easy carve roasting joint.

It's good to enjoy venison, with its supremely healthy meat and lean quality, and we source ours from areas where deer management is crucial. Experts estimate there have never been so many deer in the UK, and with an absence of natural predators their sheer numbers threaten to overwhelm natural ecosystems. We source our wild venison from the Cairngorms in Scotland and the Fountains Abbey Estate, which is just up the road from us in Ripon, North Yorkshire. The Cairngorms is one of the wildest and romantic areas of the British Isles, while the Fountains Abbey Estate supplies us with wild parkland venison as their rangers need to control the numbers carefully. We typically stock Red deer, but occasionally receive Sika and Fallow deer.
