Using a dry cure, this free-range spatchcock chicken is inspired by Italian feasting to create zesty and flavoursome chicken. Developed by our Michelin-starred chef, Jeff Baker, and made entirely in-house using a dry rub made up of sea salt, sugar, lemon peel, fennel seeds and coriander seeds, expect the ultimate crispy skin full of summer flavour. Whether you slow roast on the barbecue, or in the oven, this chicken is a crowd-pleaser. Pair with seasonal vegetables and cous cous with pomegranate seeds for a summer roasting favourite.

Our Free Range Spatchcock Chicken is great taste award-winning and from small farms that rear their chickens slowly. Fed a nutritious, natural and varied diet, these tasty chickens enjoy a life on lush pastures and are left to roam and forage. The result of this welfare rich life is wholesome, succulent and delicious chicken that tastes like chicken should. A traditional butchery method, spatchcocking - or butterflying - involves the skillful removal of the chicken's backbone to flatten the bird. This makes for shorter cooking times, and more surface to season making the Spatchcock Chicken a favourite with chefs.
