Our cushion of wild venison is a tender parcel cut from the shoulder and wrapped in crépinette for a festive slow roast. We use wild venison for its naturally rich flavours. These are enhanced with Yorkshire spice developed by our Executive Development Chef, Jeff Baker. This Christmas spice blend features juniper, black pepper, and orange zest for a seasonal and aromatic finish. Our cushion of wild venison is the perfect joint for a showstopping festive roast, and should be served with simple side dishes such as creamed potato and red cabbage.

All of our Christmas range delivered on 19th Dec to 23rd Dec is guaranteed to stay fresh until Boxing Day *except products containing pastry which are pre frozen. 48 hour deliveries (Highlands & Islands) may have a shorter life depending on dispatch times.

The cushion of wild venison is expertly cut from the venison shoulder and prepared by our masters to offer a lean pouch of meat. This is then stuffed with winter stuffing which will enrich and flavour the meat. Finally, the meat is tied neatly on the butcher's block for outstanding presentation and an easy carve finish.

It's good to enjoy venison, with its supremely healthy meat and lean quality, and we source ours from areas where deer management is crucial. Experts estimate there have never been so many deer in the UK, and with an absence of natural predators their sheer numbers threaten to overwhelm natural ecosystems. We source our wild venison from the Cairngorms in Scotland and the Fountains Abbey Estate, which is just up the road from us in Ripon, North Yorkshire. The Cairngorms is one of the wildest and romantic areas of the British Isles, while the Fountains Abbey Estate supplies us with wild parkland venison as their rangers need to control the numbers carefully. We typically stock Red deer, but occasionally receive Sika and Fallow deer.
