Inspired by the Italian cotechino, this large free-range pork sausage is destined for a slow cook. Traditionally served warm on a bed of lentils in Italy, expect a hearty and nourishing free-range sausage that's perfect for cold winter evenings. The name, 'cotechino', derives from 'cotica', meaning pork rind, as it was once developed to use the pork rinds and the less valuable cuts from the pig. Our Michelin-star chef Jeff Baker has used free-range pork sourced from our network of small local farms, with a blend of free-range pork fat for a meltingly tender finish. Gently seasoned with salt and white pepper, as well as garlic and nutmeg this Cotechino is a delicious Italian-inspired delicacy. Expect tender, melt in the mouth pork with plenty of natural flavour.
