Our carvery leg of Yorkshire mutton is an impressive roasting joint, perfect for Christmas dinner. This is a rich and bold, fuss-free cut that will satisfy the heartiest of appetites with its indulgent quality. We source our mutton from older sheep, usually aged between two and five years, the meat is well developed by virtue of the upland pastures they graze upon, and ultimately more interesting to taste and fuller in flavour.

Leg Of Mutton

Our mutton range is sourced from sheep in their prime. This ensures rich well-marbled meat that has been dry-aged for a minimum of seven days in our dedicated dry aging room. The increasing popularity of mutton on restaurant menus is testament to the quality of this sometimes overlooked meat. This joint is carefully cut and prepared with the bone in to further enhance the flavour of this rich, flavoursome meat.

It's good to eat and enjoy mutton, showing farmers that there is a market for their flocks of mature sheep. For many years, mutton has been one of Britain's best kept culinary secrets but that's slowly changing as people embrace the quality of this meat. Our flocks forage and graze naturally, eating a mix of wild grasses, flowers, herbs, and heathers. This gives the mutton its rich, succulent taste which makes this meat such a delicacy. We want to revive the tradition of eating mutton and help more people realise that this supremely enjoyable meat should be enjoyed. Our heritage mutton is sourced from flocks of Suffolk, Swaledale, and North of England Mules.
