A must-try for a Christmas roast, this celebration mutton roasting joint is sourced from mature flocks of Swaledale ewes and promises an indulgent and bold centrepiece, deserving of the top table. The shoulder of mutton is fully boned out to leave a 'cushion' of meat. This is then stuffed with the Balmoral stuffing that combines F&Co black pudding and F&Co savoury haggis, to complement the rich flavour of the mutton.

All of our Christmas range delivered on 19th Dec to 23rd Dec is guaranteed to stay fresh until Boxing Day *except products containing pastry which are pre frozen. 48 hour deliveries (Highlands & Islands) may have a shorter life depending on dispatch times.

About the cut

Mutton Cushion

On the butcher's block, this cut requires skill and time, firstly cutting the shoulder and boning the joint, leaving a whole piece of fresh meat to be stuffed with festive flavours before being prepared into an easy to carve 'cushion'. The Balmoral stuffing refers to the indulgent mix of black pudding and haggis that lends flavour and natural succulence to the mutton.

It's good to eat and enjoy mutton, showing farmers that there is a market for their flocks of mature sheep. For many years, mutton has been one of Britain's best kept culinary secrets but that's slowly changing as people embrace the quality of this meat. Our flocks forage and graze naturally, eating a mix of wild grasses, flowers, herbs, and heathers. This gives the mutton its rich, succulent taste which makes this meat such a delicacy. We want to revive the tradition of eating mutton and help more people realise that this supremely enjoyable meat should be enjoyed. Our heritage mutton is sourced from flocks of Suffolk, Swaledale, and North of England Mules.
