Description

A must-try alternative for Christmas dinner, this free-range mutton roasting joint is sourced from mature flocks of ewes. The shoulder of mutton is fully boned to leave a 'cushion' of meat allowing for easy carving, which is stuffed with black pudding and savoury haggis to complement but not overpower the rich flavour of the mutton. On the butcher's block, this cut requires skill and time, firstly cutting the shoulder and boning the joint, leaving a whole piece of fresh meat to be stuffed with traditional flavours before being prepared into an easy to carve 'cushion'. Serve alongside your favourite trimmings and use the cooking juices from the joint to create a thick, velvety gravy for a standout roast that'll leave you wanting more.

How to cook balmoral mutton cushion

For best results, allow time for low and slow pot roasting, so the meat almost falls apart. Allow to rest for at least half the roasting time, so that the fibers relax making for tender and succulent free-range lamb.
