Description

A prime steak cut through and left on the bone to feature both sirloin and fillet with maximum flavour and exquisite tenderness. Ideal for a big feast, this is one of the most prized cuts of the beast, and requires skill to prepare neatly. Ours are sourced exclusively from grass fed herds for optimum marbling and depth of flavour, before being matured by our Master Butcher to concentrate the flavour, and enhance the meat's natural qualities.

"Dry-aging is popular among those who particularly know their meat because of the increased tenderness, flavour and taste sensation it brings about. Specialist steak houses, top restaurants and upscale butchers are all united in their opinion that dry aging provides a quality of beef unsurpassed by other processes."

About the cut

T Bone Steak

A key skill of any butcher is making a steak look presentable and ready for the top table. The T bone is particularly challenging as it requires ample proportions of both fillet and sirloin, while cutting through the bone. Not to be confused with the larger and thicker American-style porterhouse steak, these slighter smaller British style T Bones are dry aged matured ready for the top table.

About the breed

Galloway

A rugged breed of the Scottish borders

Tasting notes:
creamy, traditional, grassy
Region:
Yorkshire

The Galloway, likes its 'belted' cousin, is a hardy heritage breed that promises a leaner finish to its beef. The breed's ability to thrive in tough climes has seen herds spread to all corners of the globe, but they are most at home in the pristine upland landscapes of Northern England and the Scottish Borders. Here they mature at their own pace on wild grazing. That means flavour is given a chance to develop naturally, with their diet giving the meat its juicy character, and gamey flavour.
