What the judges said:
"Now this looks the business! The aroma is gorgeous. On cutting, we found the meat to be succulent, juicy and flavoursome. If we had this in a restaurant we would be really, really happy. Considering there was little or no fat this is so moist! Well done for a great piece of meat."

How to cook pork rib eye steak on the bone
A cut from contemporary trends in butchery increasingly appearing on specials boards as chefs discover the qualities of the juicy and flavoursome pork rib eye. This steak is very versatile, being well suited to grilling, frying, or griddling. If frying cook for four to five minutes on a high heat, and serve with buttery mash and a rich grain mustard.

About the cut
Pork Rib Eye Steak On The Bone
Not to be confused with its beef counterpart, the Pork Rib Eye Steak is inspired by trends in American butchery, and is so named for the generous nugget of fat that caramelises the succulent meat upon cooking. This steak is cut from between the neck and the saddle, which promises plenty of creamy fat covering, which explains why British pork breeds are so in demand from chefs the world over for their rich quality.

About the breed
Heritage
we'll choose from our selection of available free range pork
It's good to eat and enjoy meat from free range systems, showing farmers that there is a market for herds reared in an ethical manner. When intensive farming reigned unchallenged in the second half of the last century, many of our traditional breeds all but disappeared because they don't take kindly to factory farming. We want to change this by backing free range farming and helping more people realise that we need to safeguard the variety of our farms and to demand meat with intrinsic flavour that comes from higher welfare systems. All of our meat fits that bill perfectly.
