Taken from mature flocks of ewes older than two years, this super lean diced mutton boasts a complex and rich flavour associated with Yorkshire mutton and makes a fantastic slow cook, braising cut for warming winter dishes. The succulence and character of this meat owes to the rich diet our flocks enjoy on the tops of the moors and down in the dales, eating wild herbs, heather, grasses, and flowers native to this part of North Yorkshire. A must for both the meat connoisseur, and those looking for a comforting rich and tasty slow cooked meal.

How to cook our diced mutton

A slow cooking favourite with a low heat serving to break down the rich meat and add to it delicious flavours. Try in a tagine, slow cooking with onion, garlic, tomatoes and mixed spice, and finishing with dried fruit and almonds. Alternatively this is particularly good served with cous cous or some crusty sourdough on a chilly evening.

Dark meat with plenty of character, this mutton is cut into generous chunks on the Butcher's block for your home cooking. Ours is sourced direct from flocks left to graze in the near wilderness of the North York Moors, before being matured for seven days in our dedicated dry aging room to tenderise the meat. Increasingly in demand, mutton is a key example of our mission to embrace forgotten butcher's practices.

Our heritage mutton is sourced from flocks of Suffolk, Swaledale, and North of England Mules.
