Lean, tender, and notable for its ability to absorb flavours, this cut of elegant prime veal is well served by braising or pot-roasting, and ideal as an alternative centrepiece. Sourced from farms with strict welfare standards, this is premium milk fed English veal, which boasts the close texture that makes veal so sought after, as well as delicate character and aroma.
Sourced from ethically reared veal, this topside is cut from the rear of the animal after four to five days hanging to achieve characteristic flavour and texture. Less robust than its beef counterpart, the luscious meat is often one of the first cuts to be sold, with it being boned, rolled, and tied by hand for a neat, ready to roast, and easy to carve joint.
Lean, and tender, this veal topside is delicate and sweet, making it ideal for the top table, and being used as an alternative roasting joint. Try slow roasting on a trivet of onion, carrot, and celeriac to infuse the joint with aroma and fragrance, and serve alongside creamed potatoes, tender fine beans, and glazed carrots.
