Our Diced Veal is perfect for long, slow cooking, or adding to beef dishes, boasting delicate flavour and a tender, close texture as the meat stews on low heats. Sourced exclusively from ethically reared prime milk fed English veal, this cut reflects the quality of our veal and makes for delicate and discerning dishes all year round.
Diced Veal is cut into cubes from choice cuts of veal, securing the characteristic colouring of the pale pink meat, and promising fine texture. This cut is particularly sought after, breaking down upon slow cooking to offer tenderness in the pot, and in contrast to beef, more subtle flavours and delicate aromas.
To slow cook, lightly fry the dice veal before adding in a pre prepared mirepoix of chopped onion, carrot, and celeriac, continuing to lightly fry, then adding in half a bottle of white wine, as well as chicken stock, and cooking long and slow. Serve with buttered ribbon noodles, tarragon, and button mushrooms.
