Whole duck as it should be: Succulent and satisfying, with the irresistible rich flavour that makes duck such a favourite. Perfect for roasting whole and glazing as a special centrepiece, our ducks reflect our supply chain of only trusted farmers who use traditional techniques of raising poultry, coupled with high welfare standards so their birds plump up gradually in adequate living space. On the very odd occasion this product might have to be dispatched previously frozen. We will always advise you in advance if this is the case. When this happens it cannot be refrozen. The duck is dispatched frozen, and defrosts en route to you. Consume within 24 hours after defrosting. Please make sure the duck is thoroughly defrosted before cooking.
Our ducks are sourced from small, traditional poultry farms, where they mature slowly to yield the best meat on rich diets. The difference in quality with mass produced duck is often dramatic, with this poultry ordinarily reserved for the restaurant trade because of its superior flavour.
A whole roast duck always feels like a treat with its crispy skin and full flavoured, satisfying meat. Fruity sauces especially cherry and orange suit it well. Leftover duck fat can be used to make fantastic roast potatoes and rosti. Boil up the carcase with vegetables and herbs to make a particularly tasty household stock.
